Tuesday night Dinner – Paleo stew and fruit dip for dessert

So I may have fallen off the paleo wagon for a couples weeks but im back on now, I am pretty good about following the “rules” but I do incorporate Protein powder in my daily eats.

Tonight for dinner was a crock pot paleo stew that consisted of : One butternut squash cubed, one sweet potato cubed, one can of crushed tomatoes, one can of low sodium tomato paste, two cubes of beef broth, loads of spices (including cinnamon), one pack of stewing beef and one pack of ground beef.  I used what i had in the fridge and it turned out to be pretty darn good!!

for dessert I made a cacao dip from almond milk, cacao powder, protein powder and coconut oil. I add ingredients in the food processor till i get the gooey “dip” like consistency i like. I then chopped up some bananas and put them on a tray with parchment paper along with some red grapes and spread the “dip” all over. I let it sit in the fridge for a few hours to let the coconut oil solidify again, and voila!!! “cacao covered fruit!” sooooo good! The vanilla protein powder adds a little sweetness to counter the bitter of the cacao. If i used exact measurements i’d  include them but i just keep adding ingredients till it looks and tastes how I want.

    Hey Ash…
    I see all your FB posts about the “paleo” diet….and I was always wondering what it is. Can you write a post explaining a little more about the diet, how you heard about it and also about why you have choosen it as part of your lifestyle??
    p.s. love the blog idea
