Christmas and New Year

I hope everyone had a great Christmas and Fab New years Eve celebration?

So what are some of your new years resolutions?

For me, I don’t really wait till the New Year to start or stop something. I do it in that moment. I tend to be a procrastinator to begin with and so if in December I say “I’ll wait till the new year to eat clean” I’d be depressed, fat, and have no energy. So for me the best way to get it started and be sure to stay committed is to start in the moment.

This Christmas as many of you know I cooked for the Mariani side of the family since it was my dads “turn” to host. I made three med sized turkeys which seemed to be enough for  twenty five ish people ( and yes I had expected 40, since that is the number I was told). My Gravy turned out great, i made one batch “unclean” lol with poultry gravy mix from bulk barn, and I thickened the other natural gravy with tapioca powder which tasted amazing.

I also made my own desserts since I figured the majority of people wouldn’t like the Paleo version of anything..lol.

Heres the list of things i made and the recipies.

Green Tea Squares

Ingredients

  • 2 TBS almond flour
  • 2 TBS coconut flour
  • 1.5-2 tsp. Matcha powder (I use Teavanna brand)
  • 2.5 TBS walnut oil
  • 2 TBS raw honey
  • 2 TBS canned coconut milk
  • 1 egg
  • splash of vanilla extract

Mix it all together in a square baking dish that can be microwaved ( i use a rubberish type of baking pan). Microwave for 3 min – i tripled the recipe so I microwaved for 9 minutes. I also drizzled with honey and put in the oven for a little bit to ensure it was all cooked.SO GOOD

Pecan pie bars

Ingredients

  • 2/3 C Dates
  • 1 1/2 C Almond Flour
  • 1/2 C Coconut Oil
  • 3 Eggs
  • 1 C Pecans Pieces

Preheat oven to 350. In a food processor, puree dates and coconut oil.
Move mixture into a bowl and add in eggs and almond flour. Stir in pecan pieces and spread mixture into a coconut oil greased baking dish.
Place in preheated oven and bake for 24-30 minutes.

Lemon Poppy Seed Muffins

Ingredients

  • 6 eggs
  • 1/2 teaspoon vanilla
  • 2 lemons, juiced
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • zest from 2 lemons
  • 1/2 tablespoon poppy seeds

Preheat oven to 325 degrees. Line a muffin pan with 12 liners.

In a large bowl, whisk eggs, vanilla, and lemon juice. Melt together the coconut oil and honey; pour into egg mixture and whisk to combine.

In a small bowl, stir together coconut flour, baking soda, and lemon zest. Pour the dry ingredients into the wet ingredients and whisk until smooth. Stir in poppy seeds.

Fill each muffin cup with a scant 1/4 cup of batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the pan and then remove to a rack to finish cooling.

Fudge Brownie Bites

  • 2 cups almond butter
  • 2 eggs
  • 1 ripe Banana
  • 1/4 cup coconut oil
  • 1/2 cup maple syrup
  • 1/2 palm sugar (from bulk barn)
  • 1/2 teaspoon baking soda
  • 6 oz unsweet chocolate ( i used those baking chocolate circles)

Preheat Oven to 350

Melt chocolate and set aside to cool. Mix all ingredients with electric mixer. Spoon into muffin cups. Bake for 20 minutes but check on them frequently because your oven could vary.
