Protein BALLS

Paleo energy balls: in a food processor mix a half a cup of almonds, walnuts, pumpkin seeds, hazelnuts, and pecans, take the nut flour out of the processor and then blend up about 6 dates and shredded coconut, put them all together and add ground coffee and cacao and mix it all up with coconut oil, form into little balls and throw them in the fridge and presto! Easy to bring on the go energy balls, I’m sure the recipe would work well with chocolate protein instead of cacao powder!

Easy Peasy Protein Bar

Sub the Cream for Coconut milk mixed with a hand blender for extra thickness.

Primal Pallet Protein Product

  •  C of Cacao powder
  • 2  TBS palm sugar
  • 1 TBS walnut or Safflower oil
  • 1 TBS of vanilla

Then mix in the following ingredients to form a dough.

  • ½ C of chocolate whey protein
  • ½ C of unsweetened dried shredded coconut
  • 3 large TBS of  raw nut butter
Then add nuts or anything else you’d care to add.  Combine this all together then form it into a single log.  Slice the log into individual servings which can be wrapped in cellophane and kept in the refrigerator till use.

Elana’s Pantry Bars

  • 2 cups almonds (raw)
  • ½ cup golden flaxseed meal
  • ½ cup unsweetened shredded coconut
  • ½ cup creamy roasted almond butter
  • ½ teaspoon celtic sea salt
  • ½ cup coconut oil
  • 4 drops stevia
  • 1 tablespoon agave nectar
  • 1 tablespoon vanilla extract
  • 1 cup dark chocolate chips (optional)
  1. Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor
  2. Pulse briefly, about 10 seconds
  3. In a small sauce pan, melt coconut oil over very low heat
  4. Remove coconut oil from stove, stir stevia, agave and vanilla into oil
  5. Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste
  6. Press mixture into an 8×8 inch Pyrex baking dish
  7. Chill in refrigerator for 1 hour, until mixture hardens
  8. In a small saucepan, melt chocolate over very low heat, stirring continuously
  9. Spread melted chocolate over bars; return to refrigerator for 30 minutes, until chocolate hardens
  10. Remove from refrigerator, cut into bars and serve

Green Protein Bar

  • 1/4 cup sesame seeds
  • 1/4 cup sunflower seeds
  • 1 1/2 cups coconut, finely shredded
  • 2 tbsp chia seeds
  • 2 tbsp flax powder
  • 1/4 cup protein powder
  • 2 tbsp lucuma powder (possibly at The Stone Store in Guelph)
  • 2 tbsp greens first powder or MATCHA GREEN TEA
  • 1/2 cup almond milk or coconut milk
  • 1 tbsp vanilla
  • 1/2 cup sunflower butter
  1. In a food processor pulse together all the dry ingredients 8 to10 times. Add in the milk, vanilla and sunflower butter and pulse again until everything is combined. Press the mixture into a 8 x 8 baking dish.

Chocolate Ganache

  • 1/2 cup raw cacao powder
  • 3 tbsp coconut oil
  • 1/4 cup maple syrup or honey
  • 2 tbsp coconut or almond milk
  • 1 tbsp vanilla
  • pinch of sea salt
  1. Combine ingredients in a small saucepan over low heat until everything is melted and smooth. Spread over the green bars and refrigerate overnight.
